Paseo, Céntrico, and Tiendita Now Open at Downtown Disney

We have your first look at the new Downtown Disney restaurants, with Paseo, Céntrico, and Tiendita available for guests.

Earlier this year, it was announced that new dining experiences would be heading to the Downtown Disney District at Disneyland Resort. The new restaurants are part of an overall update to Downtown Disney, which has included an updated Jazz Kitchen Coastal Grill and Clyde’s Hot Chicken, as well as the Downtown Disney LIVE! Stage and lawn. And now a few of those exciting new restaurants are open, and we we were able to get a first look!

Downtown Disney New Restaurants

Gaytán is the first Mexican-born chef to earn a Michelin star, and has become a widely-recognized ambassador of Mexican cuisine. “My mother instilled in me a passion for cooking, which inspired me to move to America to hone my craft. Throughout my career, I have been merging the traditional French cooking techniques I’ve learned with the traditions and recipes of childhood favorites inspired by my family,” Gaytán said. “Getting the chance to combine my love for my home country, my family, and cooking and display that to the guests of Paseo, Céntrico and Tiendita is truly an honor. I’m extremely proud to debut these restaurants, which were heavily influenced by my heritage and family, and hope those visiting the Downtown Disney District will create their own memories here, anchored by good food and good company.”

Paseo

Paseo features a contemporary dining room and bar, filled with accents of wood, greenery, and woods that celebrate Mexco’s culture. Gaytán’s vision for the restaurant was to put a spotlight on lesser-known Mexican dishes, with a robust menu that features reimagined and modern versions of Gaytán’s childhood favorites

A few examples of what you’ll find on the menu here include cochinita pibil, a pork recipe derived from a recipe of Gaytán’s mother. Pulpo enamorado features roasted octopus finished with a creamy tuna aioli. The vision for Paseo is to transport diners to teh heart of Gaytán’s hometown, creating a memorable dining experience from the food served.

Céntrico

Céntrico is a courtyard bar and restaurant serving upscale Mexican cuisine and tequila-based cocktails. Céntrico is designed with open, airy spaces, with custom wooden elements and greenery throughout toe capture the spirit of a Mexican hacienda. The vision for the restaurant is to serve as a gathering place, with a menu featuring Mexican staples like chicken enchiladas and a modern twist on a Caesar salad.

Over at the bar, you’ll find a cocktail menu with unique options like the Ritual Margarita with Espolon tequila, ginger liqueur, guava, and lime juice. Then there’s the El Mariachi in Manhattan, a Mexican twist on a Manhattan cocktail. The dishes and drinks are served in an outdoor space where groups can gather around the table to try a range of menu items.

Tiendita

Tiendita is a quick-service dining option that serves Mexican flavors and street-food on the go. You’ll have the option to order through a self-ordering kiosk, with menu options such as esquites, a Mexican street-food staple that transcends borders. Plus, enjoy tacos al pastor, including marinated pork roast.

Even though it’s quick-service, the thoughtful design details can still be found throughout. Guests can watch as the culinary team prepares the food, which is done in a bright, glass space.

Design of the Restaurants

The design of each of the restaurants serves as much of a purpose as the delicious dining options. The distinct design elements of Paseo and Céntrico come from award-winning Mexican architect Jorge Gracia, founder of Tijuana-based GraciaStudio. The furnishings of the restaurant come from La Metropolitana, a Mexico City-based design and carpentry company.

The bespoke dinnerware for Paseo and Céntrico was created by Anfora, a celebrated dinnerware company that is embedded in Mexican culture and craftsmanship. These elements all lend themselves to the unique dining experience you can enjoy at the new restaurants in Downtown Disney.
