Disney Recipe: Pineapple Cupcake Inspired by DOLE Whip

In celebration of DOLE Whip Day, Disney has shared a recipe for their DOLE Whip Cupcake from Contempo Cafe.

It’s DOLE Whip Day, and Disney World and Disneyland are celebrating with special treats in the parks for the special day. But, if you don’t plan on being in the parks for the next few days, you can still celebrate at home. Disney has shared a recipe for the DOLE Whip Cupcake, a delicious pineapple cupcake made to resemble the iconic treat. Served at the Contempo Cafe at Disney’s Contemporary Resort, we’re sharing the recipe that will allow you to make these delectable cupcakes at home!

DOLE Whip Cupcake Recipe

With pineapple mousse, buttercream, and delicious vanilla cupcakes, here are the ingredients you’ll need to make Disney’s Pineapple Cupcakes inspired by DOLE Whip, which is served over at Contempo Cafe at Disney’s Contemporary Resort.

DOLE Whip Cupcake Ingredients

Pineapple Mousse Ingredients

  • 1/2 cup heavy whipping cream
  • 1/3 cup whole milk
  • Three tablespoons pineapple-flavored powdered gelatin

Pineapple Buttercream Ingredients

  • One tablespoon pineapple juice
  • Three tablespoons pineapple-flavored powdered gelatin
  • 1/2 cup vegetable shortening
  • 1/2 cup unsalted butter, softened
  • Four cups powdered sugar
  • Two tablespoons whole milk

Cupcakes Ingredients

  • 12 vanilla cupcakes from a favorite recipe or box mix
  • Yellow food coloring
  • Orange food coloring
  • 12 maraschino cherries

Directions to Make the DOLE Whip Cupcake

For Pineapple Mousse:

  1. Whip the heavy cream in an electric mixer until soft peaks form. Set aside.
  2. Heat milk in a saucepan over medium heat until hot but not boiling. Whisk in gelatin and stir until dissolved.
  3. Remove from heat and cool for ten minutes.
  4. Fold the gelatin mixture into whipped cream until fully mixed.
  5. Refrigerate for at least four hours, and up to two days.

For Pineapple Buttercream:

  1. Combine pineapple juice and gelatin in a small bowl until the gelatin is dissolved. Set aside.
  2. Cream shortening and softened butter in an electric mixer fitted with a paddle attachment until it’s fluffy.
  3. Add gelatin mixture and beat on medium speed until fully mixed.
  4. Add powdered sugar, one cup at a time, and beat on low speed until fully mixed. Increase to a medium speed and beat, scraping the side of the bowl as needed, until the frosting is stiff.
  5. One teaspoon at a time, add the milk until the buttercream is light and fluffy.
  6. Divide the buttercream in half and store in two airtight containers until ready to use.

For Cupcakes:

  1. Using a 1-inch cookie cutter or apple corer, cut a hole about 2/3 of the way down the center of each of the cupcakes.
  2. Fill the hole with reserved pineapple mousse, removing any excess from teh top.
  3. Add a few drops of yellow and orange food coloring to one of the reserved buttercream containers until yellow.
  4. Put white buttercream in a piping bag with a star tip. Spoon yellow buttercream in a second piping bag, also with a star tip.
  5. Pipe buttercream on cupcakes, alternating between yellow and white to create a soft-serve look.
  6. Top with a maraschino cherry.
